Ingredients

For the cream cheese layer:

8 oz cream cheese, softened

2 tsp vanilla extract

¼ cup granulated Stevia or other low carb sweetener to taste

1 cup heavy cream

For the raspberry layer:

1 cup raspberries, pureed

2 tbsp granulated Stevia or other low carb sweetener to taste

Instructions

  1. Line an 8×8 inch baking pan with parchment paper. Set aside.
  2. In the bowl of a stand mixer fitted with the whisk attachment beat the cream cheese and sweetener.
  3. Add the vanilla extract and beat until blended.
  4. Add half of the heavy cream and mix for 2 minutes.
  5. Add the remaining heavy cream and mix on medium speed for 3 minutes until the mixture is thick with firm peaks.
  6. Pour the mixture in the prepared pan.
  7. In a bowl combine the pureed raspberries and sweetener.
  8. Spoon the raspberry mixture over the cream cheese mixture.
  9. Place the pan in the freezer.
  10. Freeze for about 2-3 hours or until set.
  11. Slice into 24 equal-sized pieces.
  12. Store the fat bombs in an airtight container in the freezer.
