Nourishing Garden Vegetable Instant Pot Beef Stew (Low Carb)
One of the best ways to make a homemade soup that’s incredibly delicious and nutritious is by using an Instant Pot. I bought one a few months ago and ever since I’ve been cooking soups, stews, and chilis nearly non-stop. It’s definitely one of the best cooking related investments I’ve ever made. Today I’ll be sharing one of my favorite recipes for making a nourishing garden vegetable Instant Pot beef stew. It just might be the most soul-satisfying stew I’ve ever made. Not only does the beef chuck roast make sure the stew is nice and satiating, but the fantastic mix of garden vegetables used ensures that the stew provides you with a ton of essential vitamins, minerals, antioxidants, and phytonutrients.
How to Make the Best Beef Stew in an Instant Pot
If you’ve checked out some of our previous superfood stew recipes, then quite a few of the ingredients used in this recipe will seem familiar to you. There’s a good reason for that – they’re all sound nutritional choices that add both flavor and great health benefits to your meal. Take the pairing of garlic and onion for example. They’re both members of the Allium family of vegetables, and they each provide similar benefits for your health. Some of the known benefits of garlic and onion include their ability to boost your immune system, their ability to help prevent heart disease by lowering total cholesterol and blood pressure, and the fact that they contain some pretty potent cancer prevention properties. This stew also uses a familiar mix of vegetables by including celery, carrots, and zucchini. These garden veggies go a long way in making sure that you’re getting plenty of vitamins, minerals, and disease-fighting antioxidants every time you enjoy a bowl of this stew. Zucchini (as with most healthy green veggies) is well known as a great way to help increase your overall antioxidant activity thanks to its unique biological components. (2) You’ll also be adding 1 ½ cups of fresh green beans that have been trimmed and cut in half. Like most other types of legumes, green bean consumption has been found to lower your risk of developing many types of chronic disease, including type 2 diabetes, heart disease, and metabolic syndrome. For added flavoring, you’ll also be using two teaspoons of Italian seasoning, one tablespoon of no sugar added tomato puree, and two cups of homemade bone broth. The only other thing you’ll need to make the recipe is a single cup of water. You can follow the recipe directions below for which settings to use on the Instant Pot and what order to cook the ingredients in. When you’re ready to serve the stew, you’ll want to season it with salt and pepper before adding some fresh parsley as a garnish.

Ingredients
- 1 pound beef, chuck roast, fat trimmed, cut into ½ -inch pieces
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 stalks celery, chopped
- 2 carrots, chopped
- 2 tsp Italian seasoning
- 2 cups chopped zucchini
- 1 ½ cup fresh green beans, trimmed and cut in half
- 1 tbsp no sugar added tomato puree
- 2 cups homemade beef bone broth
- 1 cup water
- salt, black pepper to taste
For garnish:
- chopped fresh parsley
