Roasted Garlic Cauliflower Bites with Creamy Lemon Dipping Sauce

Ingredients

4 cups cauliflower florets

3 garlic cloves, minced

3 tbsp olive oil

salt, black pepper to taste

For the sauce:

½ cup mayonnaise

2 tbsp chopped fresh parsley

1 tsp lemon zest

1 ½ tbsp fresh lemon juice

salt, black pepper to taste

Instructions

  1. To make the sauce in a bowl, combine all the ingredients.
  2. Season with salt and black pepper to taste and refrigerate until ready to use.
  3. Preheat oven to 425°F.
  4. Arrange the cauliflower florets in a single layer on a baking sheet.
  5. Add the minced garlic and olive oil and toss to combine.
  6. Season with salt and black pepper to taste.
  7. Bake in preheated oven for 25- 30 minutes, stirring halfway through through the cooking time, until the florets are golden and tender.
  8. Serve immediately with the sauce.
