Mind-Blowing Roasted Buffalo Cauliflower with Homemade Ranch

There are very few meals out there that can’t be made better by making a spicy Buffalo version, so you can just imagine all the different combos I’ve tried since then in the name of research. One of the better ones I’ve tried was this roasted buffalo cauliflower with homemade paleo ranch dip. You simply need to add a bit of garlic powder, paleo approved mayo, and Frank’s RedHot sauce to your cauliflower and you’ve already got one heck of a great tasting snack to munch on. This is where you get that ‘buffalo’ flavor from, but the homemade paleo ranch dip just seals the deal.

Ingredients

6 cups cauliflower florets

1 ½ tsp garlic powder

1 tbsp homemade or store-bought paleo approved mayonnaise

¾ cup Frank’s RedHot sauce

salt, black pepper to taste

For the Paleo Ranch:

½ cup homemade or store-bought paleo approved mayonnaise

¼ full fat coconut milk

½ tsp dried dill

½ tsp dried garlic powder

1 tsp dried parsley

½ tsp dried onion powder

½ tsp. dried chives

salt, black pepper to taste

Instructions

  1. Preheat oven to 425°F.
  2. Place the cauliflower florets in a large bowl.
  3. In another bowl, combine the mayonnaise, garlic powder and Frank’s RedHot sauce.
  4. Pour the mixture over the cauliflower florets and toss to combine.
  5. Season to taste with salt and black pepper.
  6. Arrange the cauliflower florets in a single layer on a lightly greased baking sheet.
  7. Bake in preheated oven for 25- 30 minutes, stirring halfway through through the cooking time, until the florets are tender.
  8. To make the sauce, in a small bowl, combine all the ingredients.
  9. Season with salt and black pepper to taste.
  10. Serve the cauliflower with the sauce.
