On top of that, these pizza bites also feature garlic powder, green onion, and bacon as well. And the best part of all? Not only does this recipe make one ridiculously tasty pizza snack, it’s also low carb and 100% keto-friendly.

Loaded Cheesy Cauliflower Pizza Bites

Ingredients

2 ½ cups riced cauliflower

2 eggs

1/4 cup shredded cheddar cheese

½ tsp garlic powder

½ cup shredded mozzarella cheese

2 tbsp sliced green onion

4 bacon slices, cooked and crumbled

salt, black pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. Place the cauliflower rice in a microwave safe bowl and sprinkle with pinch of salt.
  3. Mix to combine.
  4. Cover with a lid.
  5. Microwave at 600W for 5 minutes.
  6. Remove from the microwave oven and allow to cool completely.
  7. Using a clean dish towel or cheese cloth, drain the cauliflower completely, removing as much water as possible.
  8. Transfer the cauliflower to a bowl.
  9. Add the eggs, cheddar cheese and garlic powder.
  10. Season to taste with salt.
  11. Mix to combine.
  12. Line a large baking sheet with parchment paper.
  13. Scoop out mixture 2 tablespoons at a time and shape into rounds ½ inch thick.
  14. Bake in preheated oven for 20-25 minutes or until golden brown.
  15. Remove from the oven.
  16. Top each cauliflower base with shredded mozzarella.
  17. Bake for 5 minutes or until the cheese is bubbly and melted.
  18. Remove from the oven.
  19. Top with crumbled bacon and green onion and serve.
