Metabolism Boosting Beef Bone Broth Chili (The Best Keto Soup Ever!)

I can’t think of very many meals that are more satisfying for the soul than a warm bowl of chili. The wonderful combination of lean ground beef, spices, and veggies never seems to disappoint. Today I’ll be sharing a recipe that offers everything I love about chili and takes it one step further by making a metabolism boosting beef bone broth chili. It still has all of the great chili ingredient staples I mentioned above, but it also adds in a bit of homemade bone broth and cocoa powder for maximum flavor. The end result is quite possibly the best keto-friendly soup I’ve ever tasted – and there has been quite a few!

Keto-Friendly Bone Broth Chili That’s Soul-Satisfying and Healthy

You’re going to need to use a Dutch oven when making this chili. Start out by adding some olive oil into it and heating it over a medium heat. Go ahead and cook one large finely chopped onion for about 4-5 minutes, then add in four minced garlic cloves and cook for about 30 seconds before finally adding in all of your lean ground beef. This mixture of ingredients is good enough to make a meal all on its, with the garlic and onion providing a ton of flavor while the ground beef adds a ton of protein and saturated fat. In addition, olive oil is well known to provide some fantastic benefits for your cardiovascular health (1) while research has found that garlic and onion both contain some rather potent cancer prevention properties. Next, add in the diced bell peppers and carrots. You can use whatever color of bell pepper you prefer – I usually go with red or yellow when I make this recipe. They’re an extremely rich source of vitamins and minerals, such as vitamins B6, potassium, manganese, vitamin C, folate, antioxidants, and other carotenoids. And speaking of carotenoids, the carrots also offer an abundance of beta carotene, vitamin B6, dietary fiber, and vitamin K. They’re also a good source of vitamin A, which the beta carotene converts into in your body. (3)

After cooking the carrots and peppers for a few minutes, you can then add in three cups of homemade bone broth (we’ve previously shared a fantastic recipe for making your own bone broth from scratch – check it out by clicking here). With that done, go ahead and in the remaining ingredients – oregano, thyme, cumin, chili powder, smoked paprika, cinnamon, cocoa powder, tomato paste, and chopped tomatoes. All of these ingredients go a long way towards making your chili taste unbelievably good while also bolstering its nutritional content.

The mix of herbs and spices used isn’t just incredibly flavorful – they’re also packed full of antioxidant and anti-inflammatory properties that may help to prevent diseases like cancer. (4) Adding cocoa powder provides just a hint of chocolate flavor to the chili, while also providing a bit of added protection against disease thanks to the beneficial polyphenols it contains. (5)

Cover the Dutch oven with a lid and leave it cook for about two hours. You can then stir in ¼ cup of hemp hearts before seasoning the chili with a bit of salt and pepper. Once that’s done, you’ll be all set to serve the chili – I would recommend adding sliced green onions and sour cream for a tasty garnishment.

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 2 bell peppers, diced
  • 3 carrots, diced
  • 1 ½ pound ground lean beef
  • 1 can (14 oz) chopped tomatoes
  • 3 cups homemade bone broth
  • ½ tbsp oregano
  • 1 tbsp thyme
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cinnamon
  • 1 1/2 tsp cocoa powder
  • 2 tbsp tomato paste
  • ¼ cup hemp hearts
  • salt, black pepper to taste

For garnish:

  • sour cream
  • sliced green onions

Instructions

  1. In a large Dutch oven heat the olive oil over medium heat.
  2. Add the onion and cook for 4-5 minutes or until or until softened and translucent.
  3. Add the garlic and cook for 30 seconds.
  4. Add the beef and cook until no longer pink.
  5. Add the peppers and carrots and cook for 2-3 minutes.
  6. Add the bone broth, chopped tomatoes, oregano, thyme, cumin, chili powder, smoked paprika, cinnamon, cacao powder and tomato paste.
  7. Cover with a lid and cook over low heat for 1 ½ -2 hours. 
  8. Stir in the hemp hearts.
  9. Season to taste with salt and black pepper.
  10. Serve warm with sour cream and sliced green onions.
