Metabolism Boosting Beef Bone Broth Chili

- 1 tbsp olive oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 2 bell peppers, diced
- 3 carrots, diced
- 1 ½ pound ground lean beef
- 1 can (14 oz) chopped tomatoes
- 3 cups homemade bone broth
- ½ tbsp oregano
- 1 tbsp thyme
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cinnamon
- 1 1/2 tsp cocoa powder
- 2 tbsp tomato paste
- ¼ cup hemp hearts
- salt, black pepper to taste
For garnish:
- sour cream
- sliced green onions
- In a large Dutch oven heat the olive oil over medium heat.
- Add the onion and cook for 4-5 minutes or until or until softened and translucent.
- Add the garlic and cook for 30 seconds.
- Add the beef and cook until no longer pink.
- Add the peppers and carrots and cook for 2-3 minutes.
- Add the bone broth, chopped tomatoes, oregano, thyme, cumin, chili powder, smoked paprika, cinnamon, cacao powder and tomato paste.
- Cover with a lid and cook over low heat for 1 ½ -2 hours.
- Stir in the hemp hearts.
- Season to taste with salt and black pepper.
- Serve warm with sour cream and sliced green onions.
