This recipe is easy to make and ready in 30-minutes, perfect for on-the-go people that don’t have the time to spend in the kitchen preparing dishes from scratch. For this recipe, we include some of nature’s finest superfoods.

The Goodness of Natures Superfoods in a Delicious Soup Recipe

A superfood is a term used for vegetables and fruits that have a high polyphenol antioxidant content and a rich nutritional profile. For this dish, we focus on the nutrition found in butternut, garlic, and bone broth. (1)

Polyphenol antioxidants clear the blood of free-radicals, harmful particles that cause cell oxidation and cell death. Butternut is rich in antioxidant compounds, as well as vitamins C and E, and minerals, such as potassium, magnesium, and pantothenic acid.

Before you get started with the recipe, it’s critical that you use only organic, sustainably farmed produce for this meal. Commercial farming methods spray crops with an array of herbicides and pesticides to prevent crop loss. However, the vegetables absorb these chemicals, transferring them to your body during digestion. (2)

Start your recipe by heating a thick-based pot and add a few tablespoons of olive oil. Toss in the chopped onion and let it brown. Add the garlic and cook for another 30-seconds before adding the bone broth and water to the pot.

Bone broth is another superfood rich in amino acids and proteins, known as collagen. Collagen breaks down during cooking and releases gelatin, one of the primary building blocks of new bone and muscle tissue. Bone broth has a healing effect on the gut and reduces gastrointestinal inflammation responsible for developing a systemic inflammatory disease. (3)

Toss your cubed butternut squash into the soup and bring the mixture to a boil. When the soup starts bubbling, turn down the heat and cover the pot with a lid. Cook for 15 to 20-minutes, or until the butternut is tender enough to pierce easily with a fork.

When the soup is cooked through, the final step involves transferring it to a blender, where you add a cup of full-fat coconut milk. Coconut milk adds a tangy zest to the dish that gives it an eastern flair. Coconut milk is also rich in saturated fats, long-chain fat molecules with a double bond on the end of the chain.

Coconut is another one of nature’s superfoods and the healthy fats contained in a cup of coconut milk help to regulate your cholesterol profile. Blend the milk and soup until you achieve a creamy texture.

The smell of all the ingredients mixing at high speed will intoxicate your senses, and it will require some effort not to take a sip from the blender after you’ve finished mixing the ingredients. After blending, pour into bowls and serve to your loved ones.
