Bone Broth Butternut Squash Soup

Superfood Bone Broth Butternut Squash Soup (YUM!)

Ingredients

1 tbsp olive oil

4 ½ cups butternut squash, peeled and cubed

1 medium onion, chopped 

2 garlic cloves, minced

2 tsp curry powder

½ tsp red pepper flakes

¼ tsp ground cinnamon

½ tsp ground ginger 

4 cups homemade or store bought bone broth 

1 cup water 

1 cup full fat coconut milk, plus extra for drizzling 

salt, black pepper to taste

Instructions

  1. In a large pot heat the olive oil over medium heat. 
  2. Add the onion and cook for 4 -5 minutes or until softened and translucent. 
  3. Add the garlic and cook for 30 seconds. 
  4. Add the butternut squash cubes and spices and saute for 5 minutes. 
  5. Add the bone broth and water and bring the soup to a low boil. 
  6. Cover with a lid and cook for 15-20 minutes or until the butternut squash is fork tender. 
  7. Remove from the heat. 
  8. Transfer the soup into a blender and add the coconut milk. 
  9. Blend until smooth. 
  10. Season to taste with salt and black pepper.
  11. Serve warm.
