Turmeric Meatball Soup (Heart-Healthy and Family-Friendly)
Meatballs are one of my favorite things to make for dinner. They’re just so incredibly versatile. You can make them out of everything from chicken to beef to pork to even turkey. Not only that, but there are so many different ways to add spices or other tasty ingredients that can really mix up the flavors. Another great way to enjoy meatballs is by making meatball soup, especially this amazing turmeric meatball soup recipe. You’ll be making your own meatballs entirely from scratch and combining them with a tasty homemade soup base. The end result is a delicious soup that’s incredibly satisfying while also being super good for you as well.
Homemade Meatballs + Homemade Soup = Best Meal Ever
The first order of business when making this recipe is to prepare your meatballs. You can use one pound of either chicken or turkey breast mince when making them – it’s totally up to you. Whatever you decide on, combine it in a bowl with the fresh grated ginger, red chili flakes, chopped coriander, cornflour, and a single egg white. The cornflour and egg white will go a long way in helping to hold your meatballs together, while the remaining ingredients serve to both add a ton of flavor to them while making sure they’re incredibly nutritious as well.
Ginger is a great spice to add to your recipes – not just because it adds a ton of great flavor, but it’s incredibly good for you as well. It’s jam packed full of potent antioxidant and anti-inflammatory properties that will help to keep diseases at bay. (1) The red pepper flakes offer similar benefits thanks to their capsaicin content, which also helps to relieve inflammation and the oxidative stress caused by harmful free radicals. (2) Last but not least, the coriander contains several micronutrients that studies have found may be potentially useful in preventing certain types of disease as well. (3)
After mixing the ingredients together, form them into tablespoon sized balls and set them aside. With that done, you can start making your soup base by adding more ginger into a pan along with the ground turmeric, homemade bone broth and star anise. If you’re not sure how to make your own bone broth, we’ve got a fantastic recipe that can help you out – all you’ll need is an Instant Pot. You’ll be using 1 ¼ teaspoons of the turmeric which I find is just the right amount to make the soup spicy but not too spicy. In addition to enhancing the flavor of your soup, turmeric is great for relieving inflammatory and oxidative conditions, arthritis, metabolic syndrome, and it may even help with anxiety. (4)
Cook the above ingredients for about 15 minutes before straining the broth. Add your chicken dumplings into the mix and leave it to simmer for 8-10 minutes. Finally, add in six ounces of baby spinach and 10 ounces of cooked egg noodles to finish the soup off. The spinach adds an excellent mix of essential vitamins, minerals, fiber, and antioxidants into the soup while egg noodles are always a great choice when making soup. Whenever you’re ready to serve the soup, sprinkle some sliced spring onions over top of it and season to taste with salt and pepper.

Ingredients
For the soup:
1 inch fresh ginger, peeled
4 cups homemade bone broth
3 spring onions, sliced
1-2 star anise
1 ½ tsp ground turmeric
6 oz baby spinach
10 oz cooked egg noodles
For the meatballs:
1 pounds chicken or turkey breast mince
2 tsp grated fresh ginger
¼ tsp red chili flakes
1 tbsp chopped fresh coriander
1 tbsp cornflour
1 egg white
salt, black pepper to taste
Instructions
- To make the meatballs, place all the ingredients in a bowl and mix to combine.
- Form the meatballs into 1 tablespoon sized balls and set aside.
- Put the ginger, bone broth, star anise and turmeric in a large pan.
- Bring to a simmer and cook with a lid on for 15 minutes.
- Strain the broth and return it to the pan.
- Add the chicken dumplings and simmer for 8-10 minutes until cooked through.
- Add the spinach and the noodles and cook for 1-2 minutes.
- Season to taste with salt and black pepper and sprinkle with sliced spring onions.
- Serve warm.
