Turmeric Meatball Soup

Turmeric Meatball Soup (Heart-Healthy and Family-Friendly)

For the soup:

1 inch fresh ginger, peeled

4 cups homemade bone broth

3 spring onions, sliced

1-2 star anise

1 ½ tsp ground turmeric

6 oz baby spinach

10 oz cooked egg noodles

For the meatballs:

1 pounds chicken or turkey breast mince

2 tsp grated fresh ginger

¼ tsp red chili flakes

1 tbsp chopped fresh coriander

1 tbsp cornflour

1 egg white

salt, black pepper to taste


  1. To make the meatballs, place all the ingredients in a bowl and mix to combine.
  2. Form the meatballs into 1 tablespoon sized balls and set aside.
  3. Put the ginger, bone broth, star anise and turmeric in a large pan.
  4. Bring to a simmer and cook with a lid on for 15 minutes.
  5. Strain the broth and return it to the pan.
  6. Add the chicken dumplings and simmer for 8-10 minutes until cooked through.
  7. Add the spinach and the noodles and cook for 1-2 minutes.
  8. Season to taste with salt and black pepper and sprinkle with sliced spring onions.
  9. Serve warm.
