Ingredients
12 cherry tomatoes
12 black olives, pitted
5 oz feta cheese, cut into 12 cubes
½ medium cucumber, sliced
1 small red onion, cut into 12 wedges
12 skewers
For the dressing:
1 tbsp olive oil
1 tsp red wine vinegar
½ tsp dried oregano
salt, black pepper to taste
Instructions
- On each skewer alternately thread the cherry tomato, cucumber slices, red onion wedge, black olive and feta cube.
- In a small bowl whisk together the olive oil, red wine vinegar and dried oregano.
- Season to taste with salt and black pepper.
- Drizzle the mixture over skewers and serve.
