Life-changing Chicken Salad Bites (High Protein Snack)
While I quite enjoy a wide variety of different salads, chicken salad has always been my number one go to. There’s just something about the mix of juicy chicken breast pieces and fresh veggies that keeps me coming back for more, so it’s no wonder that I’m totally obsessed with this recipe for making life-changing chicken salad bites. It takes everything that you know and love about chicken salad and turns it into a bite-sized high protein snack. All you’ll need to do is combine a few choice ingredients (chicken breasts, celery, cream cheese, sour cream, blue cheese, green onions, and Frank’s RedHot sauce) to make one incredibly good chicken salad, and then scoop it out onto some cucumber slices. These chicken salad bites make for a perfect ‘grab and go’ healthy snack.

Life-changing Chicken Salad Bites (High Protein Snack)

Ingredients
1 long English cucumbers, cut into thick slices
2 cups cooked chicken breast, diced
1/3 cup diced celery
4 tbsp cream cheese, softened
2 tbsp sour cream
4 tbsp Frank’s red hot sauce
3 tbsp blue cheese, crumbled
2 green onions, sliced
salt, black pepper to taste
Instructions
- In a bowl place the cream cheese, sour cream and hot sauce and stir to combine.
- Add the chicken, celery, crumbled blue cheese, green onions, salt and black pepper and toss to combine.
- Place one tablespoon of chicken salad on each of the cucumber slices.
- Serve.
I love this recipe btw! I did tweek mine some to be less fat and more protein; I used plain nonfat Greek yogurt and cottage cheese in place of cream cheese and sour cream 🤗
