You’ll be whipping up a tasty homemade egg salad mix that features ingredients like Dijon mustard, celery, dill, and mayo and then scooping it onto your cucumber slices. This recipe makes for quite a protein packed snack to enjoy, while also offering up a load of beneficial antioxidants thanks to all of the healthy greens that go into making it.
Easy 6-Ingredient Cucumber Salad Bites

1 long English cucumber, cut into thick slices
6 hard boiled eggs, diced
½ cup homemade or store bought mayonnaise
½ cup finely diced celery
1 tsp dried dill
1 tsp Dijon mustard
salt and black pepper to taste
- In a bowl place the mayonnaise, mustard and dill and stir to combine.
- Add the eggs, celery, salt and black pepper and toss to combine.
- Place one tablespoon of egg salad on each of the cucumber slices.
