Easy 6-Ingredient Cucumber Salad Bites
Cucumber is easily one of my favorite veggies to slice up and enjoy as a healthy snack. As a matter of fact, I even like to serve a small plate of sliced cucumber along with dinner most of the time. As good as cucumber is on its own though, it’s even better when you follow this recipe for making quick and easy 6-ingredient cucumber salad bites. You’ll be whipping up a tasty homemade egg salad mix that features ingredients like Dijon mustard, celery, dill, and mayo and then scooping it onto your cucumber slices. This recipe makes for quite a protein packed snack to enjoy, while also offering up a load of beneficial antioxidants thanks to all of the healthy greens that go into making it.

Ingredients
1 long English cucumber, cut into thick slices
6 hard boiled eggs, diced
½ cup homemade or store bought mayonnaise
½ cup finely diced celery
1 tsp dried dill
1 tsp Dijon mustard
salt and black pepper to taste
Instructions
- In a bowl place the mayonnaise, mustard and dill and stir to combine.
- Add the eggs, celery, salt and black pepper and toss to combine.
- Place one tablespoon of egg salad on each of the cucumber slices.
- Serve.
