6-Ingredient Vegan Nut Crunch Protein Bars
- Prep Time: 15 minutes
- Cook Time: 30 minutes

Ingredients
½ cup coconut flakes
2 cups almonds
1 cup peanuts
2/3 cup unsweetened whole grain puffed cereal
½ cup maple syrup
¼ cup coconut oil, melted
Instructions
- Preheat oven to 325°F.
- Line an 8×8 inch pan with parchment paper and set aside.
- In a bowl place all the ingredients and mix to combine.
- Pour the mixture into the prepared pan and smooth with spatula.
- Bake for 30-40 minutes or until the top is golden.
- Let the bars cool until they reach room temperature then refrigerate overnight.
- Lift the mixture out of the pan and slice into 12 bars.
- Serve immediately or keep the bars in an airtight container in the refrigerator until ready to serve.
