6-Ingredient Vegan Nut Crunch Protein Bars

½ cup coconut flakes

2 cups almonds

1 cup peanuts

2/3 cup unsweetened whole grain puffed cereal

½ cup maple syrup

¼ cup coconut oil, melted


  1. Preheat oven to 325°F.
  2. Line an 8×8 inch pan with parchment paper and set aside.
  3. In a bowl place all the ingredients and mix to combine.
  4. Pour the mixture into the prepared pan and smooth with spatula.
  5. Bake for 30-40 minutes or until the top is golden.
  6. Let the bars cool until they reach room temperature then refrigerate overnight.
  7. Lift the mixture out of the pan and slice into 12 bars.
  8. Serve immediately or keep the bars in an airtight container in the refrigerator until ready to serve.
