I’m a sucker for the bread and butter basket they serve at restaurants as a sort of starter. Man, that stuff gets me every time. There’s just something about warm bread and creamed butter that I can’t resist. When I switched to low-carb, I will admit, I had a hard time giving up my pastries and desserts. If you’re anything like me, you’ll appreciate recipes like this one because they make the transition so much easier. I can’t even begin to tell you how much!
90 Seconds is All You Need for This Easy Keto Bread Recipe
You read that right. Sometimes recipes just take minutes to make with great success. Talk about ‘quick and easy’ eh? I love how there are only 4 ingredients to this recipe, making it one of my all-time favorites. You don’t even have to do a lot of clean up.
First thing you have to do is grab a microwave-safe mug. This is important because you’ll essentially be ‘cooking’ in this mug, so you don’t want it to shatter. Microwave the butter until it’s barely melted and take it out. A few seconds should do it. Next, add the egg and mix it into the butter. Once they’re combined, add your almond flour, baking powder and salt and whisk until the mixture is smooth.
Almond flour is different from almond flour because it contains fewer carbs and more fats, not to mention almonds are an excellent source of vitamin E, copper, magnesium, protein and fiber. The baking powder will help fluff it up a bit, and the salt will tie all the flavors together.
Once it’s all combined, microwave it on high for about 90 seconds. Less is more; don’t overcook it right away! Take it out just before it 90 seconds if you’re iffy about the cooking time. You can see if it’s done by inserting a toothpick into the center. If it comes out clean, it’s cooked through.
The only downside to this recipe is it’s single serve, so you can’t really make it for the family unless you want to microwave your keto bread in the microwave one after the other. I haven’t tried baking this recipe in the oven yet, so if you do, please let me know how it goes!
The Best 90 Second Keto Bread in a Mug – Quick and Easy Low Carb Bread

3 tbsp almond flour
1 tbsp butter
½ tsp baking powder
- Place the butter in a microwave-safe mug and microwave until the butter is melted.
- Add the egg and mix to combine.
- Add the almond flour, baking powder and salt and whisk until smooth.
- Microwave on high for 90 seconds or until just firm to touch and toothpick inserted into the center comes out clean.
- Remove from the mug and slice.
- To toast, heat the butter in a cast iron skillet over medium heat.
- Add the slices and toast until golden-brown, about 30 seconds per side.
