You’ll be a believer in no time!
The Ultimate Keto-Friendly Protein Balls
You’ll need to combine your three scoops of protein powder in a bowl with one teaspoon each of cinnamon and pumpkin spice mix. Both of these ingredients will give your protein balls that delicious pumpkin spice flavor you know and love – while also giving them quite a boost in nutritional value as well.
Cinnamon is one of my favorite spices to use in all kinds of recipes because of it’s potent antioxidant and anti-inflammatory properties. (1) Next add in ½ cup of cream cheese and a bit of pure vanilla extract and mix to combine. The cream cheese is the missing ingredient required to complete the delicious pumpkin spice cheesecake flavor of these protein balls, while the vanilla helps to add a bit of added flavor in its own right.
You can then slowly add in the nine tablespoons of coconut flour, one tablespoon at a time, until you’re able to shape the dough by hand and then refrigerate it until it’s hard enough to roll into balls. Using coconut flour is a great way to finish off the recipe, especially since it’s one of my favorite keto-friendly flours. It provides a little bit of everything you could hope for from a keto-friendly ingredient – a ton of healthy saturated coconut fats, dietary fiber, and protein. It’s also a great baking option for diabetics due to its low glycemic index rating. (2) Once your dough is hard enough, roll it into 14 balls and freeze them for a minimum of one hour before serving.
