Easy Sheet Pan Chicken Fajitas for a Healthy Dinner
I’ve mentioned before how I could easily live off chicken for the rest of my life because it’s so easy to build delicious low carb recipes around it. With that in mind, I thought it would be a good idea to share another one of my favorite low carb chicken recipes, these easy sheet pan chicken fajitas. Fair warning though — I hope you like your fajitas spicy because you’ll be making your own deliciously spicy homemade fajita mix with this recipe. The best part is it only takes a few minutes to prepare the whole meal, and then between 12-20 minutes or so to cook everything which means you’ll be able to sit down and enjoy this fantastic low carb dinner with your family in no time at all.
Spicy Chicken Fajita Seasoning + Low Carb Ingredients = A Winning Combination
The first order of business when making this recipe is mixing your chicken breast slices together in a large bowl with everything that you’ll need for your fajita mixture. Start by adding a little bit of salt and pepper, and then go ahead and mix in ½ teaspoon of garlic powder and ½ teaspoon of onion powder. The combination of garlic and onion powder is an all-time classic in my opinion, with each of them adding quite a distinctive flavor to every meal they’re added to. Beyond just making your meals taste ridiculously good, they’re both also incredibly good for you, providing numerous health benefits, not the least of which includes their potent cancer prevention properties. After adding the garlic and onion powder, you’ll also need to mix in two tablespoons of chili powder, ½ teaspoon of ground cumin, and ½ teaspoon of paprika. This savory mix of spices really helps to give your fajita seasoning a nice kick while simultaneously adding even more great health benefits into the mix. Along with the chopped cilantro that you’ll be sprinkling over the fajita mix once it’s finished cooking, all of these culinary spices are incredibly rich sources of antioxidants and anti-inflammatory properties. Last but not least, you’ll be adding some olive oil along with one medium sized onion, a red bell pepper, and a yellow bell pepper — all thinly sliced — for a few tasty low carb veggie options to round out your chicken dinner. I’ve already briefly mentioned how good onions are for your health, but the bell peppers are no slouch when it comes to nutrition either. Their main active compound, capsaicin, is known to provide some great antioxidant and anti-inflammatory benefits while also helping to protect your cardiovascular system. (3)
Spread the mixture evenly over a baking sheet, and bake it for between 12-20 minutes, stirring everything once halfway through. Sprinkle the fajita mixture with the chopped cilantro and then divide the mixture between your choice of either your own homemade or low carb tortillas bought from the store. Be sure to serve them with lime wedges though — this meal is quite spicy!

Ingredients
1 ½ pound boneless skinless chicken breasts, thinly sliced
1 red bell pepper, seeded and thinly sliced
1 yellow bell pepper, seeded and thinly sliced
1 medium onion, thinly sliced
2 tbsp olive oil
2 tsp chili powder
½ tsp garlic powder
½ tsp onion powder
½ tsp ground cumin
½ tsp paprika
¼ tsp black pepper
salt to taste
lime wedges, for serving
2 tbsp chopped fresh cilantro for serving
4 low carb homemade or store-bought tortillas
Instructions
- Preheat an oven to 425°F.
- In a large bowl, add the chicken, bell peppers, onion, olive oil, chili powder, garlic powder, onion powder, cumin, paprika, black pepper and salt to taste and toss to combine.
- Spread into an even layer on a baking sheet.
- Bake in preheated oven, stirring once halfway through, until the chicken is cooked through and the vegetables are tender, 12 to 20 minutes.
- Sprinkle the fajita mixture with chopped cilantro.
- Divide the fajita mixture among the low carb tortillas and serve with lime wedges.
