Easy Sheet Pan Chicken Fajitas for a Healthy Dinner

1 ½ pound boneless skinless chicken breasts, thinly sliced

1 red bell pepper, seeded and thinly sliced

1 yellow bell pepper, seeded and thinly sliced

1 medium onion, thinly sliced

2 tbsp olive oil

2 tsp chili powder

½ tsp garlic powder

½ tsp onion powder

½ tsp ground cumin

½ tsp paprika

¼ tsp black pepper

salt to taste

lime wedges, for serving

2 tbsp chopped fresh cilantro for serving

4 low carb homemade or store-bought tortillas


  1. Preheat an oven to 425°F.
  2. In a large bowl, add the chicken, bell peppers, onion, olive oil, chili powder, garlic powder, onion powder, cumin, paprika, black pepper and salt to taste and toss to combine.
  3. Spread into an even layer on a baking sheet.
  4. Bake in preheated oven, stirring once halfway through, until the chicken is cooked through and the vegetables are tender, 12 to 20 minutes.
  5. Sprinkle the fajita mixture with chopped cilantro.
  6. Divide the fajita mixture among the low carb tortillas and serve with lime wedges.
