Ingredients
- 2 tbsp olive oil
- 3 tbsp butter
- 3 tbsp chopped onion
- 2 garlic cloves, minced
- 1 large head (1 pound) of broccoli, cut into florets
- 2 tsp dried thyme
- 4 cup bone broth or stock
- 1 cup heavy cream
- 1 ½ cups grated Cheddar Cheese
- salt and black pepper to taste
Instructions
- In large pot, heat the olive oil and butter over medium heat.
- Add the onion and cook for 4-5 minutes.
- Add the garlic and cook for 30 seconds.
- Add the broccoli, dried thyme, bone broth and water and cover with a lid.
- Simmer for 20-25 minutes or until the broccoli is tender.
- Remove from the heat.
- Add in the heavy cream.
- Puree the soup using an immersion blender.
- Return the pot to the stove and bring the soup to a boil.
- Turn off the heat and stir in the cheese and allow to melt.
- Season with salt and black pepper to taste and serve immediately.
