Instructions

  1. In large pot, heat the olive oil and butter over medium heat.
  2. Add the onion and cook for 4-5 minutes.
  3. Add the garlic and cook for 30 seconds.
  4. Add the broccoli, dried thyme, bone broth and water and cover with a lid.
  5. Simmer for 20-25 minutes or until the broccoli is tender.
  6. Remove from the heat.
  7. Add in the heavy cream.
  8. Puree the soup using an immersion blender.
  9. Return the pot to the stove and bring the soup to a boil.
  10. Turn off the heat and stir in the cheese and allow to melt.
  11. Season with salt and black pepper to taste and serve immediately.
