Bone Broth Potato Leek Soup for Energy and Weight Loss

  1. In a pot heat the olive oil over medium heat.
  2. Add the leek and onion and cook for 3-5 minutes or until softened and translucent.
  3. Add the potato and bone broth and bring the soup to a low boil.
  4. Cover with a lid and cook for 10-15 minutes or until the potato is fork tender.
  5. Using an immersion blender or food processor or blender, puree the soup until smooth.
  6. Season to taste with salt and black pepper.
  7. Serve warm garnished with chopped chives.
