1 cup natural, creamy peanut butter

½ cup plus 2 tbsp coconut flour

1 ½ tbsp granulated Stevia or other low carb granulated sweeter to taste


  1. In a bowl place the peanut butter, sweetener and coconut flour and using an electric mixer, beat on medium speed until blended.
  2. Cover the dough and refrigerate for 30 minutes or until hard enough to form balls.
  3. Bring the dough out of the refrigerator and roll into balls about 1 tablespoon in size.
  4. Arrange the balls on a baking sheet lined with parchment paper and freeze for 15-20 minutes or until firm.
  5. Keep the balls in an airtight container in the refrigerator until ready to serve.
