Low Carb Protein Cookies

Low Carb Protein Cookies for a Healthy Treat (These are the best!)



½ cup vanilla whey protein powder

1 tbsp coconut flour

¼ tsp baking soda

3 tbsp or to taste granulated Stevia or other low carb granulated sweetener

½ cup natural smooth peanut butter or nut butter of choice

1 large egg

1 large egg white

1 tsp vanilla extract


  1. Preheat oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. Place the protein powder, coconut flour, baking soda in a bowl and mix to combine.
  4. Add the peanut butter, sweetener, egg and egg white and mix to combine.
  5. Drop the dough by the tablespoon onto the prepared baking sheet.
  6. Flatten the cookies, using a fork, in a criss-cross pattern.
  7. Bake for 8-12 minutes or until edges of cookies have browned.
