BLT Cauliflower Pizza Bites

BLT Cauliflower Pizza Bites (Low Carb Snack)

Ingredients

4 cups riced cauliflower

1 egg

¾ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 ½ tbsp coconut flour

½ tsp garlic powder

½ tsp dried oregano

salt to taste

For the topping:

1/3 cup mayonnaise

½ cups shredded lettuce

¼ cup cherry tomato, sliced

5 bacon slices, cooked and crumbled

2 tbsp sliced green onion

Instructions

  1. Preheat oven to 350°F.
  2. Place the cauliflower rice in a microwave safe bowl and sprinkle with pinch of salt.
  3. Mix to combine.
  4. Cover with a lid.
  5. Microwave at 600W for 5 minutes.
  6. Remove from the microwave oven and allow to cool completely.
  7. Using a clean dish towel or cheese cloth, drain the cauliflower completely, removing as much water as possible.
  8. Transfer the cauliflower to a bowl.
  9. Add the egg, mozzarella, Parmesan cheese, coconut flour, garlic powder and dried oregano.
  10. Season to taste with salt.
  11. Mix to combine.
  12. Line a large baking sheet with parchment paper.
  13. Scoop out mixture 2 tablespoons at a time and shape into rounds ½ inch thick.
  14. Bake in preheated oven for 20-25 minutes or until golden brown.
  15. Remove from the oven.
  16. Top each cauliflower base with mayonnaise, shredded lettuce, sliced cherry tomatoes, crumbled bacon and green onion.
  17. Serve.
