Out of This World Paleo Lemon Pie Fat Bombs

1 cup raw cashews, soaked in hot water for 30 minutes

½ cup melted coconut oil

¼ cup coconut butter

zest of one lemon

2 tbsp fresh lemon

1 tbsp honey


  1. Drain and rinse the cashews.
  2. Place all the ingredients in a food processor and process until smooth and well combined.
  3. Transfer the mixture in a bowl.
  4. Freeze for 30 minutes or until hard enough to form balls.
  5. Bring the dough out of the freezer and roll into balls about 1 tablespoon in size.
  6. Keep the balls in an airtight container in the refrigerator until ready to serve.
