Creamy Chicken Bone Broth Soup

Probiotic-Rich Creamy Chicken Bone Broth Soup to Heal Your Gut

Ingredients

 2 tbsp olive oil 

1 medium onion, chopped 

23 medium garlic cloves, minced

1 celery stalks, thinly sliced 

1 large carrots, thinly sliced 

1 pound skinless, boneless chicken breasts

4 cups homemade bone broth 

2 cups water 

2 thyme sprigs

1 bay leaf

1 (15-oz.) can unsalted cooked chickpeas, drained 

6 ounces kale, stems removed and chopped 

1 cup plain yogurt containing probiotic bacteria or kefir 

salt, black pepper to taste

Instructions

  1. In a large pot heat the olive oil over medium heat. 
  2. Add the onion and cook for 4-5 minutes or until or until softened and translucent. 
  3. Add the celery and carrots and cook for 2-3 minutes. 
  4. Add the garlic and cook for 30 seconds. 
  5. Add the chicken, season with salt and black pepper and cook until no longer pink. 
  6. If necessary, you may add a little water while the chicken is cooking to prevent sticking.
  7. Add the bone broth, thyme sprigs, bay leaf and 2 cups of water.
  8. Cover with a lid and cook over medium heat for 25-30 minutes or until the chicken is done. 
  9. Discard the thyme sprigs and bay leaf.
  10. Place 1 cup of the soup in a blender. 
  11. Add 1 cup of yogurt or kefir and blend until smooth. Set aside. 
  12. In a pot add the chickpeas and kale and cook until the kale is just tender. 
  13. Remove from the heat. 
  14. Stir in the yogurt mixture and season with salt and black pepper to taste. 
  15. Serve warm.
