Gut Healing Cream of Broccoli Soup
Scale
- 2 tbsp coconut oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin (or more, to taste)
- 1 large head broccoli, cut in chunks (including stalk)
- 2 cups chopped Swish chard or spinach
- 4 cups homemade bone broth or stock
- ¼ cup probiotic yogurt plus extra for decoration
- salt and black pepper to taste
- In a large pot heat the coconut oil over medium heat.
- Add the onion and cook for 4-5 minutes or until softened and translucent.
- Add the garlic and cook for 30 seconds.
- Add the broccoli, cumin and bone broth and bring the soup to a low boil.
- Cover with a lid and cook for 10-15 minutes or until the broccoli is fork tender.
- Add the Swish chard and cook until just wilted.
- Using an immersion blender or food processor or blender, puree the soup until smooth.
- Stir in the yogurt.
- Season to taste with salt and black pepper.
- Serve warm.
