Easy Tomato Paste Substitute (Without Tomatoes!)

  1. Heat the olive oil in a large pot over medium heat. 
  2. Add the onion and cook for 5 minutes. 
  3. Add the carrots and cook for 2-3 minutes.
  4. Add the garlic and cook for 30 seconds. 
  5. Add the beet, balsamic vinegar, apple cider vinegar and water. 
  6. Bring to a boil.
  7. Reduce the heat and simmer for 20-25 minutes or until the vegetables are tender.  
  8. Remove from the heat and allow to cool completely. 
  9. Transfer to a food processor and process until smooth. 
  10. Store in the fridge for up to 1 month.
