Easy 8-Ingredient Slow Cooker Beef Stew for a Protein-Packed Meal

- 1 pound boneless beef chuck, fat trimmed, cut into ½ -inch pieces
- 1 ½ tsp olive oil
- 3 cups 1-inch pieces peeled sweet potatoes
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 bay leaf
- 1 stick cinnamon
- 2 (14 oz) cans organic chopped tomatoes with basil
- 1 cup homemade beef bone both
- salt, black pepper to taste
- fresh chopped parsley (optional)
- Place all the ingredients in a slow cooker and mix to combine.
- Cover with a lid and cook on low for 6-8 hours or until the beef is tender.
- Discard the bay leaf and cinnamon stick.
- Serve warm with chopped parsley if using.
