Make-Ahead Protein Cookie Mix for Easy Protein Cookies

Ingredients

For the cookie mix:

2 cups instant oats

¼ cup protein powder

½ tsp baking soda

pinch of salt

1/3 cup granulated Stevia or other low carb granulated sweetener

¼ cup sugar free dark chocolate chips

The rest of ingredients:

6 tbsp butter, melted

1 tsp vanilla

1 egg

Notes
  1. To make the cookie mix, in a blender place 1 cup of instant oats and grind into a flour.
  2. In a jar place the ground oats, whole oats, protein powder, baking powder, salt, sweetener and dark chocolate chips.
  3. Close with a lid and store in a dry and cool place.
  4. To make the cookies, preheat oven to 350°F.
  5. Line a baking sheet with parchment paper.
  6. In a large bowl, add the cookie mix, egg and melted butter and stir until a soft dough forms.
  7. Drop the dough by rounded tablespoons onto the prepared baking sheet.
  8. Bake for 8-10 minutes or until the bottoms are just lightly starting to brown.
  9. Remove from the oven and allow to cool completely before serving.
  10. Store the cookies in a tightly sealed container for up to 5 days.
