Low Carb Cauliflower Avocado Toast

Genius Low Carb Avocado Toast (Made with Cauliflower!)

Ingredients

For the toast:

10 oz cauliflower florets

1 tbsp coconut oil

2 eggs

salt, black pepper to taste

The rest of ingredients:

2 tbsp olive oil

4 eggs

1 avocado, sliced

salt, black pepper to taste

Instructions

  1. Preheat oven to 350ºF.
  2. Line a baking sheet with parchment paper and set aside.
  3. In a food processor place the cauliflower florets and pulse until the mixture resembles rice.
  4. Heat 1 tablespoon of coconut oil in a large pan over medium heat.
  5. Add the cauliflower ‘rice’.
  6. Season with salt and black pepper to taste.
  7. Stir to combine.
  8. Cover with a lid and cook for 3-5 minutes.
  9. Remove from the heat and transfer the cauliflower ‘rice’ in a bowl.
  10. Add the eggs and mix to combine.
  11. Season to taste with salt and black pepper.
  12. Spread the cauliflower mixture onto the prepared baking sheet and form into a rectangle, about ¼ inch thick.
  13. Bake in preheated oven for 15- 25 minutes or until golden and crispy.
  14. Remove from the oven and allow to cool slightly.
  15. Cut into 4 pieces. Set aside.
  16. Heat the olive oil in a large frying pan over a moderate heat and fry the eggs, in batches if necessary.
  17. Add a few slices of avocado to each toast, top with egg, season with salt and black pepper and serve.
