Ingredients

2 cups almond flour

1 tsp baking powder

2 tbsp granulated Stevia or other low carb granulated sweetener

2 large eggs

1/3 cup unsweetened almond milk

2 tbsp melted coconut oil

1 tsp vanilla extract

pinch of salt

Instructions

  1. In a bowl sift together the almond flour, baking powder and salt. Set aside.
  2. In another bowl place the eggs and sweetener and whisk to combine.
  3. Add the almond milk, vanilla extract and melted coconut oil and whisk to combine.
  4. Add the almond flour mixture and whisk until smooth.
  5. Lightly grease a non stick skillet with butter.
  6. Heat the skillet over medium low heat until hot.
  7. Drop ¼ cup of batter for each pancake onto the hot skillet.
  8. Cook until small bubbles begin to form on the top.
  9. Carefully flip the pancakes and cook on the other side 1-2 minutes or until cooked through.
  10. Serve warm.
