Homemade Avocado Mayo Substitute

Homemade Mayo Recipe Using Fresh Avocado, Instead of Eggs



1 large ripe avocado, halved and pitted 

¼ cup olive oil

1 tbsp lemon juice

1 tsp garlic powder

1 tbsp Dijon mustard

salt and black pepper to taste


  1. Place the avocado flesh, olive oil, lemon juice, garlic powder, Dijon mustard in a food processor and process until smooth and creamy. 
  2. If the mayo is too thick, add water, 1 tablespoon at time, until until you reach your desired thickness.
  3. Season to taste with salt and black pepper. 
  4. Serve immediately.
