Ingredients

For bars:

2 tbsp vanilla protein powder

¼ cup goji berries, plus more for topping

¼ cup pumpkin seeds

¼ cup almonds, plus more chopped almonds for topping

2 tbsp cashew butter

2 tbsp almond milk (more or less, as necessary)

For coating:

2 oz sugar free dark chocolate, melted

Instructions

  1. In a food processor place the protein powder, goji berries, pumpkin seeds and almonds and process to combine.
  2. While the food processor is running, add the cashew butter.
  3. Slowly add the almond milk, 1 tablespoon at a time until you get a firm dough you can shape with your hands.
  4. Divide the dough between six 3×1,5 inch silicone molds and press firmly.
  5. Freeze for minimum 2 hours.
  6. Remove the bars from the freezer.
  7. Dip each bar into the melted chocolate, sprinkle with extra goji berries and chopped almonds and freeze for another 30 minutes.
  8. Keep the bars in an airtight container in the refrigerator or freezer.
