Broccoli Salad Bites

Incredible Broccoli Salad Bites for a Low Carb Snack

1 medium broccoli head, cut into thick slices

1 small red onion, diced

4 oz blue cheese, crumbled

5 bacon slices, cooked and crumbled

1/3 cup homemade or store-bought mayonnaise

1 tsp apple cider vinegar

salt, black pepper to taste


  1. Cut broccoli slices into bite size pieces. Set aside.
  2. In a bowl place the red onion and vinegar and stir to combine.
  3. Let sit for 5 minutes.
  4. Add the mayonnaise, blue cheese, bacon, salt and black pepper and mix to combine.
  5. Place one tablespoon of blue cheese mixture on each broccoli piece.
  6. Serve.
