Bone Broth Chicken Noodle Soup

Zoodle Bone Broth Chicken Noodle Soup (Low Carb and High in Protein)

Ingredients

2 tbsp olive oil 

1 ½ pound skinless boneless chicken breasts, cut into ½ inch cubes 

1 small onion, chopped 

3 garlic cloves, minced 

3 medium carrots, chopped 

3 large celery stalks, chopped 

4 cups homemade or store bought bone broth 

2 cups water 

½ tsp dried thyme

½ tsp dried parsley 

2 medium zucchinis, cut into noodles 

3 tbsp chopped fresh parsley 

salt, black pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. 
  2. Add the onion and cook for 5 minutes. 
  3. Add the garlic and cook for 30 seconds. 
  4. Add the celery and carrots and cook for 3 minutes. 
  5. Add the chicken, season with salt and black pepper and cook until no longer pink. 
  6. If necessary, you may add a little water while the chicken is cooking to prevent sticking.
  7. Add the bone broth and 2 cups of water, cover with a lid and cook over medium heat for 25-30 minutes. 
  8. Add the zucchini noodles and cook one minute. 
  9. Add the parsley, season to taste with salt and black pepper and serve.
