2 pounds beef bones, marrow and/or knuckles

2 carrots

1 onion

2 anise stars

1 stick cinnamon

2 inch piece ginger 

23 dried chilies 

8 cups cold water 

2 tbsp apple cider vinegar 

1 bunch cilantro or parsley

10 whole black peppercorns


  1. Place all the ingredients in a slow cooker. 
  2. Cover with a lid and cook on low for 24 hours. 
  3. Let cool slightly.
  4. Strain using a fine metal strainer.
  5. Transfer the bone broth into an airtight containers or jars and refrigerate promptly.
  6. Store in the fridge for up to 5 days, or freeze for later use.
